Dorie Greenspan’s World Peace Cookies

This recipe has been on my bucket list for years now. With some extra time on my hands and world peace top of mind, I finally made them.

The story goes like this – after Dorie Greenspan and Parisian pastry chef Pierre Herme created this recipe, it was decided that if everyone in the world could have these cookies, there would be world peace. I think I agree.

The texture is unusual – a little sandy, like a sable, but soft and chewy. It has pockets of melty chocolate and an appealing crunch of sea salt on top. I’ve only had these cookies warm…because that’s how long they lasted.

Good advice from Dorie: “I don’t think you can do much to make them better and happily, there’s little you can do to ruin them. Except overbake them.”
